Kombucha Tea for Dummies

My first post has to do with something I have taken pleasure in experiencing for a few months now: The home brewing of Kombucha Tea (KT). It's a tasty, healthful and interesting beverage that has gained in popularity in the U.S. over the past few years. It is definitely still on the fringe of being mainstream, but has become a pretty trendy thing to drink for us health-conscious folk. However, the drinking of KT is a time tested and proven beverage used to improve health since around the time of the Chinese Tsin Dynasty, nearly 2250 years ago!

There are no contemporary or Western scientific studies on the health benefits of drinking KT, but simple chemical analysis has determined the beneficial and functional contents of KT, which include an array of essential B vitamins, which can naturally improve energy levels and memory function, and Lactic Acid, which serves as a naturally occurring pro-biotic. Whether any of these claims are true or not, it is still a fun and interesting beverage to create and consume, and I feel great when I drink it!

Unfortunately, it is usually only offered at high(er) end health food markets like (Whole Paycheck), and is typically sold for ~$4 per 16oz bottle. Not too bad for an occasional drinker, but an expensive habit for someone looking to drink KT on a daily basis! Fortunately for us, it is EXTREMELY easy to make at home, and even more satisfying to drink knowing that it is a product of one's own hands.

Here are my instructions for home brewing Kombucha Tea. It is a blend of my own experience and the shared experience and instruction provided by others.
